Vegan Matcha Ice Cream

Vegan Matcha Ice Cream
Ingredients
2 cans coconut cream
½ macadamia nut butter
Vegan sugar free condensed milk (1 cup coconut sugar + coconut milk)
2-4tsp matcha to taste
1tsp vanilla essence
Method
1. Vegan condensed milk: Stir and cook coconut sugar and milk on a low heat for approximately an hour till it thickens. Let cool in fridge till it thickens more.
2. Beat whipped cream until thickens
3. Slowly add condensed milk while you beat the cream
4. Add matcha and vanilla essence
5. Pour into tub and freeze overnight
Hint: Stir matcha in before continuing to blend
Protein Brownie Bites
Ingredients
¼ cup cocoa powder
6 tablespoons maple syrup or honey
¼ cup butter
¼ cup chocolate fudge flavoured plant protein
2 teaspoon vanilla essence
Pinch of sea salt
Dark Chocolate cocoa nibs melted for drizzling on top
Method
1. Combine all ingredients except cocoa nibs into a batter
2. Roll out batter into balls. Roll balls in chocolate fudge protein powder until coated.
3. Set balls on a tray and leave in the freezer for +- 30 minutes
4. Remove from freezer and drizzle over melted chocolate
Healthy’ish’ Cookie Dough
Ingredients
35g oat flour
2 tablespoons maple syrup or honey
60g smooth peanut butter
35g ground almonds
45g vegan vanilla protein powder
2-3 tablespoons unsweetened almond milk
Dark Chocolate cocoa nibs
Method
1. Combine all ingredients except cocoa nibs until fully combined. Add more milk if needed
2. Add in the cocoa nibs
3. Roll out batter into bite sized balls
4. Drizzle over melted chocolate (optional)
Notes: Makes about 5 scoops
Cashew and Mint Italian Kisses
Ingredients
250g cashew nuts soaked in water overnight
1/4 cup freshly chopped mint
3 tablespoons honey
1/3 cup melted coconut oil
1/4 cup coconut milk
2 tablespoons cocoa powder
Method
1. Blend cashew nuts, mint, honey, 2 tbsp coconut oil and coconut milk until smooth
2. Pour into moulds and freeze for +- 3 hours. Insert ice cream sticks before freezing
3. Remove from moulds and put back into the freezer for 30 minutes
4. Mix the remaining coconut oil and cocoa powder together. Dip ice cream into the mixture to coat and return to freezer to set
