Easy Tomato Soup

Tomato Soup with Rice
Ingredients
Butter/olive oil for frying
1 Onion chopped
1 tsp garlic
1 Pepper diced
4 Tomatoes (two diced, two blended)
Tomato paste
Sweet basil
Salt and pepper to taste
Boiled water
Cup of rice
Method
1. Fry onion in butter in a pan
2. Add garlic, sweet basil, and pepper
3. Once caramelized, add two diced tomatoes to fry
4. Blend two tomatoes and tomato paste
5. Boil kettle
6. After tomatoes are fried, add blended tomato sauce and 2-3 cups of boiled water
7. Add table spoon of butter and some salt and pepper
8. Add a cup of rice and leave to boil until rice is cooked

Roasted Veg Salad
Ingredients
½ cup dehydrated chickpeas
English spinach
1 reasonably sized eggplant
1 small beetroot
1 small orange sweet potato
Mushrooms
2-5 zucchinis
2 table spoons sunflower seeds
1 table spoon coconut oil
1 lemon
3 garlic cloves
Fresh rosemary and thyme
Salt and pepper
Avo
Cucumber
Baby tomato
Celery
Method:
1. Soak chick peas overnight
2. Dice eggplant into 2cm cubes and add lots of salt; let sit for 1-2 hours to drain excess water
3. Rinse eggplant and add along with the other diced vegetables to a baking tray with the sunflower seeds, thyme, rosemary, salt and pepper, and coconut oil
4. Roast for 45 minutes, turn veg halfway through
5. Boil chick peas for 20-30 minutes until soft and drain water
6. Chop celery, cucumber and tomato with leafy greens
7. Mix everything in a bowl with avo
Serves 2-3 people
NOTE: Any veg will work, use lots of colors to get diverse amino acids, vitamins and minerals
Smokey Beans on Toast with Protein
Ingredients
Olive oil
1 onion finely sliced
1 red pepper sliced
1 teaspoon smoked paprika
1 ½ cups crushed tomatoes
1 serving Phyto Pro Thrive unflavoured Protein
1 can cannellini beans rinsed and drained
Salt and pepper to taste
4 slices of bread
1 clove of garlic halved
1 avocado diced
Coriander and lemon to serve
Method
1. Heat oil in a pan and add smoked paprika. Cook for one minute
2. Stir in and combine protein powder and ½ cup water. Let simmer for a few minutes
3. Add in beans and seasoning. Cook for few minutes
4. Toast the bread, spread on garlic and some olive oil.
5. Put beans on toast and serve with diced avocado, coriander and lemon
